What kind of spares should I stock up on now that I'm into the AK platform?

Maybe an extractor and spring, recoil spring, FCG, spare gas tube and a stock set.
Really, with that you would cover anything you would need to (and could) fix on an AK.
Bolts don't hot swap, carriers are stronger than the receivers for the most part, anything receiver goes bad you toss it out. Anything barrel you toss it out.
Really on an AK, it was designed to be tossed if a unit level armorer couldn't fix it quickly. Individual solders did not carry spare parts, nor are they really useful in 99% of circumstances.

Forgot to add: Mags, mags and mags. Oh - and some spare ammo too - its too hard to reuse. . .

This is one of the reasons that I am sold on Saigas and Saiga based AKs like the SGL-21/31. The few parts you can easily replace are easily available in kit form.
